In the sunny Maremma people always grew grapes for drying, for its classical use in “Passito” and in the famous Vin Santo.
The sloping terroir, rich in volcanic rock concretions and red for its high iron content, the fine sand structure, the scarce rainfall and the sunny climate encouraged the owners to follow the path of drying grapes. 
Around mid September, as the grapes reach their full sensory ripeness, with a perfect balance of skins and seeds, we use tweezers to twist the stem rachis and stop the lymph flow, thus causing the grape to dry on the plant. 
When the grape reaches the right concentration in sugars, together with a good balance of fruity flavours and the pleasant consistence of jam, we pick the grapes for winemaking. 
The transformation is smooth, with a first extractive phase with prefermentation maceration, which lasts a few days, followed by the must fermentation in second-use barriques in order to avoid that the concentration of new tannins may have an organoleptic influence on the final product. 
The strong sugar content automatically blocks fermentation. Our wine is later refined with batònnage° and racking and takes its ripe and sweet fruity flavour and that opulent note coming from sweet tannins and sugars. This simplicity is our key to Sangiovese and Syrah.
We managed to blend the richness of the fruit nurtured by our wonderful climate, with the fruit own sweetness and finally with alcohol to preserve these pleasant features.
