The Maremma region is well known for its excellent withering wines. Indeed, the soil’s gentle inclination, its richness in minerals , and its right exposure to the sun favour the production of grapes well suited to withering.
In the first half of September, once the adequate maturity of the grapes is reached, the spines of the bunch are twisted, so as to interrupt the passage of the sap and the consequent drying of the grapes. Once the right concentration of sugars is reached, the grapes are picked to be vinified.
The transformation occurs gently, through a first cold maceration of the must, followed by a fermentation in oak barriques.
The high concentration of sugars allows the fermentation to stop spontaneously and, with subsequent batonnages and decanting, the wine refines and assumes the warm notes of sweet ripe fruit accompanied by the richness of sweet tannins and sugars. The Fabula Passito leverages and enhances the richness of the Sangiovese and Syrah grapes, balancing sweetness and alcohol, to create a tasteful and enjoyable meditative dessert wine.

Soil and vinification:

  • Production area: Caldana (Grosseto).
  • Soil composition: Sandy with areas rich in skeleton of marl nature.
  • Vineyard altitude: 150 meters a.s.l.
  • Type of cultivation: spurred cordon.
  • Density per hectare: 5000 vines.
  • Grape harvest: after the twisting of the spine, the grapes wither on the plant for about 30 days, harvested by hand after mid-October.
  • Vinification: the grapes are fermented in wood for about 15 days, after which the pomace is removed to extract maximum varietal aromas, sweet tannins and polysaccharides.
  • Aging: in barriques 60 months.
  • Bottling: starting from the third year after the harvest.
  • Refinement: at least 3 years in barriques and three months in the bottle.
  • Grapes: Syrah, Sangiovese, Montepulciano.
  • Organic: according to the specification for organic production.

Organoleptic characteristics:

  • Color: bright ruby ​​red with purple reflections.
  • Aroma: sweetness is already evident on the nose with blackberry and strawberry jam, wrapped in vanilla and a spicy cinnamon.
  • Flavor: sweet and warm, soft and intense, with tannins that perfectly balance sugars, giving the wine balance and roundness.
  • Taste: VUOTO
  • Food pairing: dry pastries, tarts, dark chocolate, aged cheeses.
  • Service: 16-18° C.
